Salmon Patties

This is a really easy way to get some good Omega oils into your diet without having to run to the store to purchase fresh fish.  Also, if you have any leftovers, these are so good crumbled up, lightly sauteed and mixed in with scrambled eggs.  Top with mozzarella cheese...  Yummy!
Salmon Patties
  • (2) 7 oz. cans of salmon (or equivalent amount if you are lucky enough to have leftover salmon)
  • 2 eggs beaten
  • 1/4 C bread crumbs
  • 1/4 C potato flakes
  • 1 medium onion, minced
  • 1/4 t dill weed
  • 1/4 t dry mustard
  • 1/4 t Italian seasoning
  • 1/8 t granulated garlic powder
  • Salt and pepper
Drain and flake the salmon.  In medium bowl, mix all ingredients together well.  Shape into patties.  If you have time, refrigerate the patties for a couple hours as that will help them maintain their shape when frying.
Heat skillet on medium heat.  Add 1-2 T olive oil.  Fry about 5 minutes on each side or until nicely browned.
